Organising a wine cellar: temperature, storage, rotation

The conditions that actually matter, a storage method that survives daily use, and the rotation that stops bottles being forgotten.
A cellar is two separate problems that often get confused: physical conditions, and organisation. The first decides whether the wine survives; the second decides whether you find it again.
The conditions, in order of importance
1. Thermal stability. This comes before temperature itself. Every warming and cooling cycle expands then contracts the wine, which draws air past the cork. A cellar steady at 16 °C keeps better than one going from 8 °C in February to 22 °C in August.
2. Temperature. 10 to 14 °C, 12 °C as the reference. Warmer speeds evolution — useful if you want to drink soon, costly otherwise. Colder slows it without stopping it, but a wine kept very cold for years stays closed.
3. Darkness. Light, and ultraviolet in particular, degrades aromatic compounds. That is what green and brown glass is for. A wine in clear glass left in the light picks up an unpleasant character within months.
4. Humidity. Around 70%. Too dry and the cork shrinks; too damp and labels go mouldy — a cosmetic problem, not an oenological one.
5. No vibration. A real but slow effect. Simply avoid standing bottles on a freezer or against a washing-machine wall.
6. No strong smells. Cork breathes. Do not store wine next to paint, solvents or onions.
Storage that survives use
Most racking systems fail for the same reason: they assume every bottle goes back where it belongs. After six months, nobody does that.
The method that holds does the opposite: number the slots, not the wines. Each rack or row gets a fixed identifier — A1, A2, B1 — and you record where the bottle is, not where it ought to be. Putting a new bottle away then means dropping it in a free hole and recording the slot, which takes five seconds and requires no sorting at all.
The corollary: filing by region or colour is a luxury that costs a lot to maintain and returns little. What you are looking for is almost never "a Bordeaux", it is "something to open tonight".
Rotation, which is the only thing that prevents losses
A well-kept cellar still loses bottles, because time passes without warning. The remedy is an annual review, always the same one:
- List the bottles whose drinking window closes within twelve months.
- Physically move them to a "drink now" area, low down or at the front.
- Drink them.
It is simple, and it is exactly what nobody does from memory beyond fifty bottles. The amount of information to cross-reference — vintage, window, quantity left — exceeds what anyone holds in their head, and a paper notebook does not sort by date.
How many bottles before you need a system
Under thirty bottles, memory is enough. Between thirty and a hundred, a spreadsheet works if you keep it current. Beyond that, the problem stops being storing the information and becomes sorting it: knowing what to drink this year means cross-referencing three fields across hundreds of rows, by hand, every year.
